Ingredients

  • 1.2kg Maris Piper potatoes, peeled and cut into 2.5cm chunks
  • 500g celeriac, peeled and cut into 2cm chunks
  • 1 garlic clove, peeled
  • 75g 50% less fat crème fraîche
  • 50g pecorino, finely grated
  • 6 thyme sprigs, leaves picked, plus extra to serve

Method

  1. Put the potato, celeriac and garlic in a large pan and cover with cold water. Bring to the boil, then reduce the heat and simmer for 12-15 mins until tender. 
  2. Drain well, then season and pulse in a food processor (or mash) until puréed with the crème fraîche, pecorino and thyme. Sprinkle with extra thyme leaves to serve.
