For the salad

  • 2 handfuls watercress or baby mustard greens
  • 125g (4oz) smoked mackerel, flaked
  • 2 spring onions
  • 8 radishes
  • 15g (2 tsp) toasted sesame seeds

For the dressing

  • 15ml (1 tbsp) soy sauce
  • 15ml (1 tbsp) sesame oil
  • 15ml (1 tbsp) lemon juice
  • 15g (1 tbsp) caster sugar
  • 5g (1 tsp) ginger, grated
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

  1. Place the salad leaves on two plates and top with the mackerel, spring onions and radishes.
  2. Mix all the ingredients for the dressing in a bowl and pour over the salads. Sprinkle with the sesame seeds and serve.
