Raspberry and elderflower Collins recipe
Whip up this tipple in an instant and serve a crowd with a real taste of summer. Sweet and tart raspberries combine with fresh mint leaves in a gin cocktail that is topped off with refreshing apple and elderflower pressé for a crisp finish. What's there not to like? See method
- 200g raspberries, plus extra to garnish
- a large handful of mint leaves, plus extra to garnish
- 200ml Tesco Finest Melodist London Dry Gin
- 750ml Tesco Finest sparkling apple & elderflower pressé
- ice cubes
Each serving contains
of the reference intake
Muddle the raspberries and the mint leaves in a jug with the end of a rolling pin. Stir in the gin.
Strain, then add to a large jug half-filled with ice cubes. Top up with the sparkling apple & elderflower pressé and garnish with mint leaves and raspberries to serve.
