Ingredients

  • 30ml Flor De Cana Rum
  • 20ml lime juice
  • 15ml sugar syrup
  • 8 mint leaves
  • 125ml Canti Prosecco (or champagne), to top up

Method

  1. Muddle 7 of the mint leaves in the bottom of a cocktail shaker or jam jar with a cocktail muddler or with the end of a narrow rolling pin, then add the rum, lime juice and sugar syrup.

  2. Shake hard with a small handful ice (approx 60g).

  3. If you have a three-piece cocktail shaker, strain once through the fitted strainer, then strain again through a sieve into a coupe glass. If you have a two-piece cocktail shaker or jam jar double strain through sieve. 

  4. Top up with the prosecco or champagne. Float the remaining mint leaf on top, to garnish.
