Ingredients

  • 125g (4 1/2oz) cornflour
  • 175g (6oz) plain flour
  • 1tsp baking powder
  • ½tbsp sesame seeds
  • 1tsp sesame oil
  • 250ml (9fl oz) sparkling water
  • 4 medium bananas, peeled and cut into thirds
  • 900ml vegetable oil
  • 4tbsp honey
  • vanilla ice cream to serve

Method

  1. Sift together the cornflour, flour and baking powder, and mix together with the sesame seeds in a large bowl. Whisk in the sesame oil and sparkling water, until you have a smooth batter. Gently stir in the chopped bananas. Heat the vegetable oil in a large pan, until a crust of bread sizzles and turns golden when dropped in. Spoon the bananas into the hot oil and cook until they are golden brown – you will need to do this in batches. Remove with a slotted spoon and drain on kitchen paper. Serve drizzled with honey and a scoop of vanilla ice cream.
