  • 100g mixed fresh herbs (such as parsley, basil or mint)
  • 2 tsp rinsed capers
  • 8 cornichons (or 2 gherkins)
  • 1 garlic clove
  • 3 tbsp red wine vinegar​
  • juice of 1 lemon
  • 7 tbsp extra-virgin olive oil

  1. Finely chop 100g mixed fresh herbs, capers, cornichons (or gherkins) and garlic. Transfer to a bowl; stir in your red wine vinegar, the juice of 1 lemon and 7 tbsp extra-virgin olive oil until it comes together. Season to taste.
