Ingredients

  • ½ large watermelon, cut into thick slices
  • 180g pack Fire Pit The Hot One marinade
  • 100g feta, crumbled
  • 10g fresh mint, leaves roughly torn
  • ½ lime, juiced
If you don't have any limes, try a lemon instead

Method

  1. Light the barbecue. While it heats up, put the watermelon slices into a large zip-seal bag, squeeze over the marinade. Massage until well coated. Set aside to marinate for 10 mins
  2. Once the barbecue flames have died down and the coals are white and ashy, grill the watermelon for 2-3 mins each side until char lines appear. Leave for 5 mins until cool enough to handle, then slice off the rind and cut into cubes.
  3. Toss in a large bowl with the feta, mint and lime juice, then season with salt. Serve any extra marinade on the side for dipping, if you like.
