This simple treat is the perfect way to end a picnic or any summer feast. With the classic flavours of an Eton mess, these little meringue sandwiches can be prepped ahead ready to assemble just before serving. There’s a handy ingredients list at the bottom of the page for everything you need.
Whip 150ml whipping cream to soft peaks in a large mixing bowl.
Hull and finely chop 125g strawberries into small pieces. Fold into the whipped cream. The cream can now be kept in the fridge in a sealed container for up to 3 days.
When ready to serve, spread the whipped cream mixture over the base of 12 shells from 2 packs Tesco Finest 12 strawberry and cream meringue shells.
Sandwich together with a second shell, gently pressing it down on top of the cream. Serve with extra strawberries, if you like.
