  • 40g low-fat spread
  • ½ lime, zested
  • ½ lemon, zested, plus 1 tsp juice
  • 10 fresh flat-leaf parsley, roughly chopped
  • 2 medium courgettes, trimmed and cut into chunks
  • 250g peas
  • 240g bag sliced spring greens
If you don't have any limes, try a lemon instead

  1. In a bowl, mash the spread, lime zest, lemon zest and juice, and parsley; season. Chill until ready to serve.
  2. Steam the courgettes for 4 mins, then stir in the peas and greens and steam for 6 mins or until tender. Tip into a serving dish and top with the butter.
