Nothing says nostalgia like a good old crisp sandwich. This coronation chicken sarnie is filled with chilli poppadoms and a little mango chutney for sweetness. It's the perfect combo of spicy, salty and crunchy - plus, it's perfect for last-minute picnics! See method

Ingredients

  • 4 ciabatta rolls
  • 8 tsp mango chutney
  • 40g aromatic salad leaves
  • 160g pack coronation chicken slices (you could also use flamegrilled roast chicken pieces)
  • 40g lightly crushed Walkers Sensations mango & red chilli chutney poppadoms
  • handful fresh coriander
  • 4 tbsp coronation mayonnaise

Method

  1. Split the ciabatta rolls and spread the bases of each with 2 tsp mango chutney. Divide the salad leaves, chicken slices and poppadoms between the rolls, then add a handful fresh coriander, if you like. Spread 1 tbsp coronation mayonnaise inside each bun lid and sandwich to serve.

Tip: Swap out chicken for ready-to-eat marinated tofu pieces to make this vegetarian.
