  • 100g cooked Christmas pudding, crumbled
  • 3½ tbsp Irish cream liqueur, plus extra to serve
  • 250ml whipping cream
  • 1 tbsp icing sugar
  • 4 meringue nests, crushed
  • Orange zest, to garnish

Method

  1. Whisk the Irish cream liqueur with the cream and icing sugar until billowy medium-stiff peaks form. Fold through the crushed meringue and crumbled Christmas pudding.
  2. Divide between 4 dessert glasses. Garnish with orange zest and serve with extra Irish cream liqueur poured over ice.
