Dietitian Catherine Rabess's black bean burgers have a Jamaican-inspired twist with spicy jerk seasoning. Pack the patties into brioche buns with a classic homemade burger sauce and your favourite toppings - we recommend red onion and lettuce. These taste great served alongside sweet potato fries (see recipe below.) See method

Ingredients

  • 2 x 400g tins black beans, drained, rinsed and patted dry with kitchen paper
  • ½ red pepper
  • 1 small onion
  • 1 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp chilli powder or cayenne pepper
  • ½ tsp smoked paprika
  • 40g panko breadcrumbs​
  • 100g feta, crumbled
  • 2 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dunns River Jamaican Jerk Seasoning
  • 2 tbsp barbecue sauce
  • olive oil cooking spray
  • 6 brioche burger buns
  • 4 tbsp mayonnaise
  • 8 cornichons, diced

Method

  1. Preheat the oven to gas 3, 170°C, fan 150°C and line a baking tray with baking paper.
  2. Spread the beans onto the lined baking tray and bake for 15 mins until slightly dried out. Increase the oven temperature to gas 5, 190°C, fan 170°C.
  3. Place the red pepper and onion in a food processer and blitz until finely chopped.
  4. Heat the oil in a pan over a medium-high heat. Add the pepper and onion mix and cook for 4 mins, then add the garlic and sauté until softened; a further 2-3 mins. If it looks watery, remove some of the excess moisture with kitchen paper.
  5. Transfer the mixture to a food processer or a large bowl. Add the spices, breadcrumbs, feta, eggs, Worcestershire sauce, jerk seasoning, barbecue sauce, salt and pepper to season. Pulse or stir everything together, then add the black beans. Mash with a fork or pulse again, leaving some larger chunks of beans to provide texture.
  6. Line a baking tray with baking paper and spritz with cooking spray to coat. Scoop the burger mixture onto the tray and form into 6-8 patties (you may need 2 trays to fit them all) around 10cm diameter and 1.5cm thick. Bake for 8-10 mins on each side.
  7. Mix all the burger sauce ingredients together, then serve the burgers in toasted buns with all your favourite toppings. Add some sweet potato fries on the side.

Tip: To cook the burgers under the grill, preheat the grill to medium-high and line baking tray/s with foil. Spritz the foil with cooking spray, then form the burger mix into patties. Grill for 8 mins each side, making sure they don’t burn or dry out. You can store leftovers in an airtight container in the fridge for up to 5 days. The burgers freeze well too, either cooked or uncooked.
