Recreate a takeaway breakfast bap from the comfort of home with our twist on the cult favourite. Sausages, eggs, cheese, gherkins and avocado are stuffed inside a sweet brioche bun with lashings of sauce. Napkins advisable. See method

Ingredients

  • 4 brioche burger buns, halved
  • 8 sausages, cases removed
  • 2 tsp vegetable oil
  • 4 mild cheese slices
  • 4 medium eggs
  • 4 tbsp 50% less fat soft cheese
  • 1 avocado, sliced
  • sliced gherkins, to serve
  • ketchup or sriracha sauce, to serve

    Method

    1. Toast the burger buns cut side down in a dry frying pan until lightly toasted. Set aside.
    2. Shape the sausagemeat into 4 patties, roughly the size of the brioche buns.
    3. Heat the oil in a frying pan to a medium-high heat and fry the sausage patties for 3-4 mins each side, flattening them down with a spatula. You want them nice and golden and crispy.
    4. Top each pattie with a slice of cheese and continue cooking until the cheese melts. If you have a lid, use this.
    5. Remove the patties from the frying pan and add the other teaspoon of oil. Fry the eggs for 3-4 mins until crispy round the edges.
    6. To serve, spread the cream cheese on the base of the bun then arrange the avocado slices on top, followed by the sausage patty, fried egg and gherkins, if you like. Drizzle over ketchup or sriracha sauce to serve.
