Packed with tropical flavours, this papaya, passion fruit and meringue mess makes for a delicious dessert that can be made in just 10 minutes. The sharpness of the passion fruit cuts through the sweet meringue, while the creamy papaya and fresh lime zest add delicious flavour. Simply omit the alcohol for a child-friendly version. See method
Ingredients
- 1 papaya, peeled and chopped
- 1 lime, zested
- 2 passion fruit, pulp only
- 30g caster sugar
- 1 vanilla pod, seeds only
- 50g (2oz) double cream
- 15g (1/2oz) soft brown sugar
- 2 tbsp coconut liqueur or rum (optional)
- 2 meringues, crushed
- 10g (1/2oz) shelled pistachios, toasted and crushed
If you don't have any limes, try a lemon instead

Method
- Place the papaya, lime zest, passion fruit pulp, caster sugar and vanilla into a bowl to marinade. Whisk the cream and brown sugar with a hand-held whisk. It needs to be a really soft whip. Fold the alcohol through, if using.
- Layer a 1/4 of the crushed meringue at the bottom of a large glass, then spoon in a 1/4 papaya mix, then a 1/4 of the cream. Repeat, finishing with some fruit pulp and pistachios on top. Do this in 2 glasses.
