Peach, lime and basil-infused ice cubes recipe

Stock your freezer with a few trays of these infused ice cubes and use them to make your drinks all the more exciting! Peach, lime and basil ice cubes are perfect for adding to a glass of prosecco for a fresh twist on a Bellini. See method

Ingredients

  • 4 really ripe peaches, halved, stoned, and flesh diced (approx. 250g)
  • 30g basil
  • 150ml soda water
  • 4 large limes, squeezed
If you don't have any limes, try a lemon instead

Method

  1. Set aside ½ the peach flesh for the blended cubes. Rip half the basil into small pieces, leaving the smaller leaves whole. Half fill one ice cube tray with soda water. Add a few peaches and some torn basil pieces to each cube. Fill with lime juice. Freeze until solid.
  2. Blend the rest of the peaches with the remaining lime juice and soda water. Tip into a second ice tray and add a whole small basil leaf to each one. Freeze until solid. Serve in your favourite drinks.
