Ingredients

  • 600g ‘00’ flour
  • 2g (1 tsp) fast-action dried yeast
  • 2g (1 tsp) salt
  • 350ml (10 1/2fl oz) cold water
  • 250g (8oz) ricotta cheese
  • 2 tbsp thyme leaves, chopped
  • 4 figs, quartered
  • 2 tbsp olive oil
  • 2 tsp honey

Method

  1. In a large bowl, combine the flour, yeast and a generous pinch of salt. Gradually mix in the water until you have a soft but not sticky dough (you may not need all the liquid). On a floured surface, knead the dough for 10-15 minutes or until smooth and elastic. Place in a large, slightly oiled bowl and cover with cling film. Leave in a warm (not hot) place for 12 hours or overnight.
  2. Preheat the oven to the maximum temperature. When your dough has proved, remove from the bowl, put on a lightly floured surface again and punch out all the air. Knead for another minute. Divide the dough into two or four and, using a rolling pin, roll out until very thin. Put onto a baking tray and spoon half the ricotta on top (or a quarter if you are making 4 small pizzas) and smooth it carefully over the dough, leaving a small space for the crust at the edge.
  3. Sprinkle over the thyme, figs and olive oil and bake for 10-12 minutes or until the pizza is golden and crisp. Drizzle over the honey and serve.
