Preheat the oven to Gas Mark 4, 180°C, fan 160°C. Butter and lightly flour a 23cm (9in) baking dish.
Arrange the cut fruit in the dish. In a bowl combine the sugar, flour and salt and make a well. Whisk the eggs into the milk and gradually pour this mixture into the dry ingredients. When you have a smooth batter, mix in the Amaretto and vanilla extract. Pour into the baking dish around the fruit (ideally a little of this will still be visible, then bake for 40-50 minutes or until puffed up and lightly browned.
