Ingredients

  • 6 plums, stones removed and roughly chopped
  • 125g caster sugar
  • 1 tsp vanilla extract
  • 750ml prosecco, chilled
  • 6 sprigs of fresh thyme

Method

  1. To make the plum syrup, place the plums, caster sugar, vanilla extract and 125ml water in a saucepan over a medium high heat. Bring to the boil and allow to simmer for 8 mins until the sugar has dissolved and the plums softened. Remove from the heat and allow to cool. Strain and chill until needed.
  2. To serve, divide the syrup between 6 large champagne flutes and top up with prosecco and garnish with a sprig of thyme. Serve.
