As autumn nights creep in, and the days become shorter, there's even more reason to get cosy and indulge with a TV treat. Crispy chorizo topped with a mix of red Leicester, mature cheddar and soft cheese, and loaded onto delicious tortilla chips, this scrumptious sofa snack is sure to satisfy your hunger cravings.   • 2 x 130g packs diced chorizo
  • 1 small onion, diced
  • 175g mature cheddar, grated
  • 50g red Leicester, grated
  • 125g soft cheese, at room temperature

For the salsa

  • 150g tomatoes, diced
  • 2 tbsp jalapeños, diced
  • 2 tbsp parsley, chopped
  • 2 tsp white wine vinegar
  • 1 tsp dried oregano

To serve

  • 200g tortilla chips
If you don't have any Cheddar, try using another hard cheese

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the diced chorizo in a cold, dry frying pan with the onion. Cook over a medium heat until the onion has softened and the chorizo is golden and crisp. Transfer to a sieve to drain away excess oil.
  2. Mix the grated Cheddar and red Leicester with the soft cheese and some black pepper. In an ovenproof frying pan or baking dish, layer up spoonfuls of the chorizo and cheese mixtures. Bake in the oven for 15-20 mins, until bubbling.
  3. Meanwhile, make a salsa by mixing together the diced tomatoes, jalapeños, chopped parsley or coriander, white wine vinegar, dried oregano and some seasoning. Spoon some of the salsa over the top of the dish. Serve the rest alongside, with tortilla chips for scooping while the cheese is still gooey.
