Ingredients

  • ¼ baguette
  • 2 tbsp houmous
  • ½ red pepper, sliced
  • 1 small carrot, grated
  • ½ yellow pepper, sliced
  • 2-3 iceberg lettuce leaves, shredded
  • ¼ cucumber, sliced
  • 1 cooked beetroot, sliced
  • 1 tbsp pesto

Method

  1. Split the baguette in half and spread the houmous over the bottom piece.
  2. Layer up the veg, drizzle the pesto over the top and sandwich together with the top half of the baguette.

Tip: You could easily double or multiply this recipe as you need. The baguettes could be made up to a day ahead and kept in the fridge, ready for a packed lunch or picnic.
