Here's a special banana pancake recipe! With warm spices and interesting textures, plus plenty of tangy berries, it certainly packs in the plant points and is a source of vitamin B12, which helps with energy levels. Nutritious but also indulgent-tasting, this makes a lovely weekend breakfast or brunch. See method

Ingredients

  • 1 large ripe banana, chopped
  • 1 egg
  • 4 tbsp self-raising flour
  • ¼ tsp baking powder
  • 2 cardamom pods, seeds finely ground
  • 20g walnut pieces, 5g chopped
  • ½ tsp vegetable oil
  • 2 large fresh mint leaves, shredded, plus extra to serve

For the fruit salad

  • 1 small banana, cut into 1cm slices
  • 75g blackberries, halved
  • ½ lemon, juiced

Method

  1. Put the large banana and egg into a small blender and blitz to combine. Add the fl our, baking powder, cardamom seeds and unchopped walnut pieces and blitz again until just combined but the walnuts still have some texture.
  2. Heat the oil in a frying pan over a medium-high heat and fry 3 dessertspoonfuls of the batter for 2 mins each side until lightly golden. Repeat to make 6 pancakes.
  3. Meanwhile, mix all the ingredients together for the fruit salad. Serve with the pancakes, scattered with the chopped walnuts and extra mint leaves.
