Sunrise passion fruit and strawberry sundaes recipe

Ingredients

  • 400g strawberries, hulled and sliced
  • 4 passion fruit, pulp scooped out
  • 4 tbsp runny honey
  • 15 fresh mint leaves, 11 thinly sliced and the remainder left whole
  • 500g tub fat-free natural yoghurt
  • 4 heaped tbsp granola

Method

  1. Purée half the strawberries with 1 tbsp of water in a food processor. Scoop out the passion fruit pulp and add half of it to the coulis. Sweeten to taste with a little of the honey if necessary. Thinly slice the mint leaving a 4 leaves whole for garnish.
  2. Layer up in glasses or jam jars; some sliced strawberries, mint, yogurt, coulis, honey, passion fruit repeating until all the ingredients are used up. Finish with granola and garnish with the whole mint leaves.

TWISTS:

Nutty sundaes: Try topping with some crushed nuts and dried fruits instead of granola.

Tropical sundaes: Use a flavoured yoghurt such as coconut and layer up with sliced banana and chunks of pineapple. Top with desiccated coconut

Cherry bakewell sundaes: Layer up fresh pitted cherries with cherry coulis, natural yogurt flavoured with a little honey and almond extract and then top with toasted flaked almonds and extra honey.
