Plan ahead with this easy breakfast recipe – you can leave the oats to soak overnight so they’re ready to enjoy in the morning or pack up for breakfast on-the-go. It will keep well, chilled, for up to 3 days – simply add the nuts and fruit just before serving.
In a large bowl, combine the oats, coconut milk drink and pineapple juice. Add the dried pineapple, mix well, then cover and chill for at least 6 hours or overnight.
To serve, stir through the Brazil nuts and divide the mixture between 4 bowls. Top with the dried tropical mix and fresh fruit. Add a little extra coconut milk drink to taste.
