With its combination of nuts, oats and fruit, this tasty breakfast will keep you energised until lunchtime. Plan ahead with this easy breakfast recipe – you can leave the oats to soak overnight so they’re ready to enjoy in the morning or pack up for breakfast on-the-go. It will keep well, chilled, for up to 3 days – simply add the nuts and fruit just before serving. See method

Ingredients

  • 250g (8oz) jumbo rolled oats
  • 200ml (1/3pt) unsweetened coconut milk drink, plus extra to serve
  • 225ml (7 1/2floz) pineapple juice
  • 60g (2 1/2oz) unsweetened dried pineapple, chopped
  • 60g (2 1/2oz) Brazil nuts, chopped
  • 100g (3 1/2oz) dried tropical mix
  • fresh tropical fruit, such as kiwi fruit, pineapple, persimmon or papaya, chopped, to serve

Method

  1. In a large bowl, combine the oats, coconut milk drink and pineapple juice. Add the dried pineapple, mix well, then cover and chill for at least 6 hours or overnight.
  2. To serve, stir through the Brazil nuts and divide the mixture between 4 bowls. Top with the dried tropical mix and fresh fruit. Add a little extra coconut milk drink to taste.
