These vibrant smoked salmon canapés are so easy to make – spice salmon with wasabi and soy sauce, load onto cooling cucumber slices and top with a little zing of spring onion. See method

Ingredients

  • 1 cucumber
  • 120g pack smoked salmon
  • ½ tsp wasabi paste
  • 1 tsp dark soy sauce
  • 2 spring onions, finely shredded
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

  1. Slice 24 x 5mm rounds from the cucumber and place on a serving platter. In a bowl, mix the salmon with the wasabi paste and soy sauce. Put the shredded spring onion in a small dish. 
  2. To assemble, spoon a little of the smoked salmon mixture onto a cucumber round and top with spring onion.
