  • 1 small watermelon, peeled
  • 1 tsp clear honey
  • 1 lime, zested, ½ juiced
  • colourful sprinkles, to serve (optional

Method

  1. Cut the watermelon into bite-sized pieces: you should have about 600g. Transfer to a lined baking tray in a single layer, then open-freeze for 6 hrs or overnight. Transfer to a freezer bag until needed.
  2. To serve, tip the frozen watermelon into a food processor with the honey and lime juice; pulse until thick and smooth. Scatter with the lime zest and some colourful sprinkles to serve, if you like.
