3 healthy berry treats for summer

Looking for an easy summer dessert that's healthy too? These three super-simple puds are all made with fresh, seasonal berries - sweet strawberries, tart raspberries, plump blackberries and juicy blueberries. All are healthy and all are individual portions, so it’s easy to make more for a crowd if you need to.

  1. Strawberry mousse

    In a large, clean bowl, beat 3 egg whites with an electric hand whisk until stiff peaks form. Add 2 tbsp caster sugar, then whisk again until firm and glossy. Gently fold in 100g 0% fat Greek-style yogurt to combine. Put 300g hulled strawberries into a food processor and blitz to a purée (you can push the purée through a sieve to remove the seeds, if you like). Spoon dollops of the egg mixture and purée into 4 glasses and ripple gently through to create a marbled effect. Decorate with an extra 100g strawberries, hulled and sliced, to serve.

  2. Mini raspberry tarts

    Preheat the oven to gas 7, 220°C, fan 200°C. Brush 2 filo pastry sheets with ½ tbsp sunflower oil and lay on top of each other. Cut into 12 squares (about 7cm each). Overlap 2 squares in each hole of a 12-hole mini muffin tin, pushing them down into the holes. Bake for 5 mins until golden and crisp then set aside to cool in the tin. In a bowl, mix together 100g 50% less fat soft cheese, 2 tbsp icing sugar and the grated zest of ½ orange. Add 50g raspberries and mash together with a fork until fully combined. Divide the filling between the cooled cases and top each with a whole raspberry and a little more orange zest.

  3. Cheat's summer trifles

    Take 4 serving glasses. In each glass add a ½ fruit loaf slice, chopped into small pieces, and sprinkle over ½ tbsp orange juice. Top with 50g mixed berries (such as blueberries, blackberries, raspberries and strawberries, chopped if large), 50g low fat custard and 50g 0% fat Greek-style yogurt. Repeat with another layer of each then finish with a final layer of berries.
