Incredibly versatile and high in protein, cottage cheese is being used in inventive new ways. You might have seen it whipped into pancakes, pasta sauces and even used to make homemade wraps. Here it adds silkiness to chocolate mousse. Don't skip the oil and sea salt garnish, it really lifts the flavours! See method

Ingredients

  • 100g dark chocolate, broken into small pieces, plus extra grated (optional)
  • 300g cottage cheese
  • 3 tbsp maple syrup
  • 1 heaped tbsp cocoa powder
  • 1 tbsp extra-virgin olive oil
  • pinch sea salt flakes

Method

  1. Melt the chocolate in the microwave or over a pan of simmering water until completely melted; set aside to cool slightly. 
  2. Put the cottage cheese in a blender with the maple syrup and blitz until silky smooth. Making sure the chocolate is not too hot, slowly pour it into the blender, add the cocoa powder and blitz again until smooth. 
  3. Divide among glasses and chill for at least 2 hrs before serving. Garnish with the oil, sea salt fl akes and extra grated chocolate, if using, to serve.

Tip: Finish these puds with your favourite toppings: try a grating of orange zest, smashed pecan nuts or – our favourite – a pinch of salt and a drizzle of extra-virgin olive oil.
