Nutty and toasty in flavour, creamy tahini works beautifully with rich dark chocolate. These sharing mousses are decadence in a bowl: Tahini-vanilla cream is stirred into a dark chocolate cream then topped with toasted nuts and seeds. Watch everyone dig in! See method

Ingredients

  • 100g 75% Tesco Finest dark chocolate, finely chopped
  • pinch of sea salt flakes
  • 200ml whipping cream
  • 350ml double cream
  • 75g icing sugar, sieved
  • 1 tsp vanilla bean paste
  • 4 tbsp tahini, stirred
  • 30g hazelnuts, chopped and roasted
  • ½ sesame seeds, toasted

Method

  1. Put the dark chocolate, sea salt flakes and 100ml whipping cream in a heatproof bowl over a pan of barely simmering water and melt without stirring. Remove from the heat, set aside for 2 mins, then stir to combine. Set aside for 10 mins or until cooled to around body temperature.
  2. Using a balloon whisk, slowly whisk 200ml double cream into the dark chocolate mixture until combined and just thick enough to spoon. Set aside.
  3. In a separate bowl, whisk the remaining 100ml whipping cream and remaining 150ml double cream with the icing sugar and vanilla bean paste until it forms soft peaks. Add the tahini and whisk again until smooth.
  4. Fold the two mixtures together until just marbled. Spoon into glasses and scatter with the hazelnuts and sesame seeds to serve.
