There’s nothing Ketan loves more than getting his family together for a healthy meal. Lately though, with life getting in the way, takeaways had become the easiest option. Luckily, he’s now found the perfect solution: a quick and easy, plant-based chilli. A raid of the veggie drawer, and a few tins later, he’s ready to roll. Piled onto crispy jacket potatoes stuffed with a creamy Alpro filling, it’s a winner with the whole family. Better still, this healthy meal is ready in just 30 minutes. See method

Ingredients

  • 4 jacket potatoes
  • 1 tbsp olive oil, plus extra to drizzle
  • 1 onion, finely sliced
  • 300g mushrooms, quartered
  • 3 mixed peppers, finely sliced
  • 1 tsp mild chilli powder
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 2 garlic cloves, roughly chopped
  • 400g tin red kidney beans, drained and rinsed
  • 2 x 400g tins chopped tomatoes
  • 400g tin chickpeas, drained and rinsed
  • 100g spinach
  • 120g Alpro Plain No Sugars, plus extra to serve
  • ½ bunch spring onions, finely sliced

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. Pierce the potatoes with a sharp knife a few times, then microwave on high for 10 mins. Check to see if a knife easily pierces them. If not, cook for 3-5 mins and test again. Put on a baking sheet and drizzle with a little oil. Bake for 10 mins until golden.
  2. Meanwhile, heat the oil in a large casserole or deep frying pan over a medium-high heat. Add the onion, mushrooms and peppers and fry, stirring, for 5 mins.
  3. Add the spices, garlic and some seasoning. Fry for 1 min, then add the beans, tomatoes and chickpeas. Reduce the heat to medium and bubble for 10-12 mins until thickened. Add a little water if the chilli becomes dry. Stir in the spinach, turn off the heat and leave to wilt.
  4. Carefully halve each potato and scoop the centre into a bowl. Stir in the Alpro Plain No Sugars, half the spring onions and some seasoning, then spoon back into the skins. Serve with the chilli, extra Alpro and the remaining spring onions.
