A quick and simple chicken sandwich that's perfect for your kids' lunchboxes or a speedy on the go lunch.
Butter slices of your favourite bread. Chop cooked chicken (or leftovers) and mix it with mayonnaise, 1 grated carrot and 1/2 tbsp sultanas.
Add a layer of shredded iceberg on one slice of the buttered bread, top with the chicken mix and finish with the other slice of bread.
