Make the most of seasonal raspberries when they're in abundance for this delicious fruity and fragrant gin. It only takes 5 minutes to prep, then let the flavours work their magic for at least 2 months and you will have a very special drink at the end of it. This would make a perfect gift for a gin lover at Christmas time or any time! See method

Ingredients

  • 12 cardamom pods
  • 400g raspberries
  • 200g caster sugar
  • 700ml gin

Method

  1. Lightly crush 12 cardamom pods with a pestle and mortar or the end of a rolling pin.
  2. Add to a 1.5ltr sterilised* jar or wide-necked bottle along with 400g raspberries and 200g caster sugar. Pour over 700ml gin and close the lid. Tip the jar upside-down and swirl around gently to make sure everything is mixed.
  3. Leave in a cool, dark place for 2-3 months, shaking the jar daily for the first 2 weeks and weekly after that. When ready, strain and decant into sterilised* bottles ready for gifting. Store in a cool, dark place for up to 1 year. Serve topped up with tonic or fizzy water, if you like.

*To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
