Take all the flavours of a tuna melt and but it in a burger! These speedy tuna patties are made with sweetcorn, mayo and lemon for a little zing, then back into buns with cheese and lettuce. We recommend serving with sweet potato fries (recipe below.) See method

Ingredients

  • 6-pack white batch rolls
  • 3 x 145g tins tuna in water, drained
  • 1 small red onion, ½ coarsely grated, ½ finely sliced
  • 80g tinned sweetcorn, drained
  • zest of ½ lemon, finely grated
  • 5 tbsp mayonnaise
  • 2 tbsp vegetable oil
  • 4 Creamfields cheese slices
  • shredded iceberg lettuce, to serve
  • sweet potato wedges, to serve (optional)
If you don't have red onions, try using white, brown or spring onions

Method

  1. Tear up 1 bread roll and blitz in a food processor to make breadcrumbs.
  2. Put the breadcrumbs (reserving a small handful), the tuna, grated onion, sweetcorn, lemon zest and 4 tbsp mayonnaise into a medium bowl. Season well and stir together. Form into four 9cm-wide and 3cm-thick patties and then roll in the remaining breadcrumbs.
  3. Heat the oil in a large frying pan set over a medium-high heat and fry the burgers for 2-3 mins on each side until golden, crisp and hot throughout. Add a slice of cheese on top for the final minute of cooking. Serve in the remaining buns with the rest of the mayonnaise, the lettuce and finely sliced onion with sweet potato wedges on the side.
