These apple pastries are so easy to make, everyone can get stuck in! With a caramelised honey and apple base, they are reminiscent of a classic apple tarte Tatin with much less prep time and no caramel to make. Enjoy warm with a little cream or ice cream or allow to cool and serve with a cuppa. See method

Ingredients

  • 3 tbsp clear honey, plus extra for drizzling
  • 1 eating apple, thinly sliced
  • 320g pack reduced-fat puff pastry
  • 3 tbsp mascarpone
  • fresh thyme leaves, chopped
  • flaked almonds, toasted

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C.
  2. Line a baking tray with baking paper. Drizzle the honey directly onto the paper in 9 rectangle shapes, each roughly 7 x 4cm, and spaced evenly apart. Layer the apple slices over the honey-covered rectangles in a slightly overlapping pattern.
  3. Unroll the pack of puff pastry and cut into 9 even rectangles. Divide the mascarpone between the rectangles, then place the pastry cheese-side down on top of the apple slices. Press down lightly to seal.
  4. Bake for 20–25 mins, or until the pastry is puffed and golden. Using a spatula, carefully flip over the tarts while still warm, then drizzle with the extra honey and top with the thyme and almonds, if you like.
