We've taken the ever-popular steak sarnie to the next level with tender ribeye steak and tangy sourdough. Treat yourself to this ultimate sandwich on the weekend or whenever you need a pick-me-up! See method

Ingredients

  • 2 tsp olive oil
  • 20g unsalted butter
  • 1 large onion, sliced into rounds (keep the rings together)
  • ½ tbsp light brown soft sugar
  • 1 tbsp red wine vinegar
  • 1 x 227g Tesco Finest ribeye steak
  • 2 tbsp Tesco Finest truffle & pecorino mayonnaise dip
  • 4 slices Tesco Finest sourdough
  • 30g wild rocket

Method

  1. Heat half the oil and half the butter in a frying pan over a low heat. Cook the onion for 10 mins without stirring, basting occasionally. Season. Flip and cook for another 8-10 mins, continuing to baste.
  2. Mix together the sugar and vinegar; pour over the onion. Turn the heat to high; cook for 5 more mins, turning halfway, and basting to caramelise. Set aside.
  3. Heat the remaining oil and butter in the pan over a medium-high heat. Season and cook the steak for 2-3 mins each side for medium-rare. Transfer to a board, cover and rest for 5 mins before slicing.
  4. Spread 2 of the sourdough slices with the mayo. Layer the rocket, steak (plus any resting juices) and the onion rings on top. Season with black pepper and sandwich with the remaining sourdough slices. Halve to serve.
