Pick approx 1kg sun ripened blackberries ( great to keep the kids busy)
Wash and place in a large saucepan with 1.5 litres go water and 200g icing sugar (adjust to taste)
Bring to the boil and simmer for approx 15 mins
Allow to cool. When cool- strain through a cloth/ muslin (- I use Tesco value kitchen cloths- approx 40p for 10)
Pour into ice lolly moulds - or if unavailable any kind of small long container ( eg- a shot glass, or even a shallow baking tray- remember to add sticks and cut to width when frozen)
Ice lolly moulds are readily available and reasonably priced- alternatively use a shallow baking tray as above. If u do not have or cannot find any lolly sticks- use wooden skewers with the sharp end removed. For an adult twist add a shot- or two of your favourite spirit. Any seasonal berry can be used.
