Brilliant new ways with blueberries

Sweet but with a distinctive sharp edge and bursting with juicy flavour, beautiful blueberries are a lovely addition to so many sweet (and savoury) recipes. Once considered a luxury fruit, they’re now more available and affordable than ever, so we’ve gathered together our favourite recipes where these little flavour powerhouses are the star ingredient. If you’re partial to a blueberry muffin or love blueberry pancakes for breakfast, we think you’ll find lots to enjoy.

  1. Healthy blueberry breakfast ideas

    Remember in the early 2000s when the blueberry was hailed as a superfood? Blueberries are high in vitamin C, fibre and other nutrients, so they make the perfect healthy choice at breakfast – they also wake up your tastebuds with their sweet and zingy freshness. Sprinkle them on porridge or smash with lime and maple syrup for an instant topping for coconut porridge.

    If you like to prep ahead, this baked oats dish is great for all the family – it’s healthy but tastes like a treat! Or start the weekend right with a pancake recipe – these spelt pancakes are topped with a warm blueberry compote. And if you’re on the go, these bircher muffins are fabulously fruity, ideal for breakfast or a mid-morning snack.

  2. Top blueberry treats and drinks

    Name a sweet muffin and most of us will answer ‘blueberry muffin’ – you just can’t beat that burst of flavour when you take a bite! Perfect for breakfast, elevenses and at teatime, this classic American bake is iconic, so much so that it’s inspired countless flavour and topping twists. This blueberry muffin recipe includes a maple streusel topping, but we have a classic blueberry muffin too.

    If you love a crumble, make a teatime treat with these moreish Blueberry crumble squares, or have a go at this twist on the classic bakewell tart, made with ready-rolled puff pastry. If you have any leftover blueberries, crush them into a fruity mojito. It has all the classic components of a mojito – rum, sugar, lime and mint – but the addition of blueberries gives a whole new flavour experience.

    Blueberries in a savoury dish? You’ve heard of teaming Cheddar with apple and feta with watermelon, well, blueberries work in much the same way: their sweet and slightly acidic taste is a perfect contrast to savoury flavours and as blueberries retain their shape well, there’s little risk of a sloppy salad or soggy bottom! Try combining with tangy feta and earthy walnuts in this satisfying Blueberry, feta and grain salad, or how about mashing up different flavours and textures in this Avocado, bacon and blueberry salad?

    You can even sprinkle blueberries on a pizza for a fruity pop with this rustic yet light Blueberry and goat’s cheese pizza. Finally, a salsa is a simple way to jazz up a dish, so why not swap tomatoes for blueberries in this punchy accompaniment to white fish?

  4. Beautiful blueberry desserts

    While juicy and sweet, blueberries have a distinct tartness, which gives them a wonderful affinity to creamy desserts. Take these mini trifle pots with lemony cream and custard, or this comforting bread and butter pud that’s studded with blueberries – the recipe is made with soya milk so it’s low in saturated fat too.

    The vivid colour of blueberries also creates a wow factor – just look at this stunning vegan cheesecake with crystallised ginger and a gingernut base, or this vibrant frozen yogurt – a mix of blueberries, creamy Greek yogurt, maple syrup and lime, it’s a winning flavour combo!
