BBQ baked potatoes
Set up a baked potato bar at your next barbecue with this easy baked potato recipe and let everybody help themselves. Simply skewer your potatoes (this makes them easy to control on the barbecue if you're making lots, and also helps them cook faster), barbecue until crisp and mix up a few different bowls of toppings for everybody to build their own ideal dish.
- Heat your barbecue to high. Wash and scrub the potatoes, then pat completely dry.
- Thread 6 potatoes onto 2 long metal skewers, brush with the olive oil and season with salt.
- Add the skewers to the barbecue, placing towards the edge so that they are over indirect heat. Cover with the barbecue lid. Cook for 30-40 mins, turning halfway through, until crispy and dark golden brown. Slice open and load up with the toppings of your choice.
Tips: While your potatoes are cooking, prepare a few different toppings so you can set up a baked potato bar for everyone to help themselves. These simple ideas all just need to be stirred together with a drizzle of olive oil:
Olive salsa – chopped green and black olives, toasted pine nuts and lemon juice.
Sweetcorn salsa – tinned sweetcorn, finely chopped spring onions, lime juice and fresh coriander.
Tzatziki – grated cucumber, Greek yogurt and chopped mint.
Italian-style tomato topping – finely chopped tomatoes, crushed garlic and basil.
Feta and pepper – crumbled feta cheese and finely sliced roasted red peppers from a jar.
