    This summer spin on roast chicken is served with a moreish salad that makes the most of the season’s fresh, juicy tomatoes. Onions and peppers are roasted alongside the chicken and added to the panzanella to give it extra flavour.     Take your picnics up a notch with this potato salad. Baby potatoes are mixed with pesto and served on a bed of peppery rocket. Top with chicken, griddled courgettes, creamy butter beans and a good drizzling of lemon yogurt dressing. Pack it all up in a hamper with some bottles of San Pellegrino for an alfresco feast to go!
