Pre heat oven to 200c, grease and line a 2lb loaf tin.

Put all the ingrediants into a large bowl and beat well for 5 mins.

Pour into your prepared tin, pop the cake in the oven and turn it down to 190c and bake for 40mins.

This cake improves after a couple of days.

  • 100g Margarine softened
  • 75g Caster sugar
  • 2 eggs
  • 175g Self raising flour
  • 1 jar lemon curd
  • 1level tsp baking powder
